Frequently asked questions

How do I get started? ( + )

Knowing what types of wine you enjoy is always a good starting point. Our knowledgeable staff can help you with your selection process based on your tastes.

Once you have selected the particular style and added the yeast to begin the wine making process, a bottling appointment is set up for you to come in and bottle your wine. When you return with your bottles, you proceed to the sterilize them and once they are sterilized, you bottle your wine using our automatic bottling and corking machines. This process takes up about twenty minutes of your time. The whole process for making wine on premise is simple and fun and our staff will be there to direct and guide you.

Ageing wine?( + )

The wine should be consumed when YOU think it is ready to drink, but be aware of the fact that when a wine is young, it is fruity, light and without any real definition. To fully appreciate the subtle characteristics of your wine, allow it to age a minimum of 3 to 6 months and serve it at the right temperature, letting it breathe at least one hour before serving.

When serving wine it is important to bring all wines to the correct serving temperature slowly and gently.

White wines should be served cold but not overly chilled, a rule of thumb when serving white wine is to serve it at the temperature of ice water. This allows the full flavor and bouquet of the wine to tantalize your palette and nose

Red wines should be served at room temperature (about 65 degrees F.). When serving more than one wine, be sure to serve them in the following order: Light before full, dry before sweet, young before old and dry white wine before red wine.
Storing wine? ( + )

There is always a risk of wine spoiling in barrels, carboys, demijohns and even gallons. Wine in a soundly corked bottle is less likely to go bad. We cannot guarantee your wine, if it remains on premise more than 30 days after your bottling date.

After wine has been bottled, it should be left standing upright in the boxes for at least 5 to 7 days after which the bottles must be put on their sides. This procedure keeps the corks from drying out and shrinking thereby letting air into the bottle and spoiling the wine.

When storing your wine, the factors to consider are temperature, vibration, light and humidity. The ideal cellar will be dark, moderately humid, and a constant temperature between 60 and 65 degrees Fahrenheit. The temperature must be constant with no great and sudden fluctuations.
